Mom’s Spaghetti Sauce
Double batch
10 cloves garlic
1 onion
1 bell pepper
1 Chile pepper
Sautee diced garlic, peppers, and onion in Olive Oil
1 spare rib (broil 8 minutes each side)
Put onion, peppers and garlic in slow cooker
Place slow cooker on stove under medium heat add:
3 – 15oz cans tomato sauce
3 – 12 oz cans tomato paste
3 – 12 oz cans of water
Approx 2-3 lbs Fresh or 2-3 cans tomatoes and juice
Stir in:
3 tsp. marjoram
3 tsp. thyme
3 tsp. basil
1 tsp. black pepper
3 tsp. sugar
3 bay leaves
(May want to add 2 tsp parsley and
2 tsp. oregano and fresh chives to suit)
1-2 cups burgundy wine
Add more water or can of tomato juice
to get consistency (1/2 – 1 ½ cups)
Bring to a boil – stirring frequently
Place slow cooker on its warming plate
Cut spare ribs to single ribs, add to sauce
Simmer for 4-6 hours
